Millau, Gem of The Grands Causses

History
Lying in the heart of the Grands Causses Regional Nature Park, at the confluence of the Gorges of the Tarn and the Dourhie, Millau is proud to be known as the capital of outdoor sports in the Southern Aveyron.
Culture
In Millau, industrial tradition dates back to Gallo-Roman times when the "confluence town' used to export its sigillated pottery throughout the Roman Empire - as the archaeological site of the Graufesenque shows.
Later, the leather and glove industry was to become famous with a "Ville et métiers d'art" label (city of artistic and craft interest). In 2005, the Viaduct - the only structure of its kind in the world, reaching 340 metres at its highest point and 25 km in length - is open to traffic.

Specialities

In this protected environnent, the way of life and authenticity comprise the guarantees for quality gastronomy, which combines farm produce (traditional pork meats, honey, cheese, etc...) and local specialities such as Roquefort, "Trénels", "aligot" potato and cheese dish, not forgetting vineyards that flourish on the slopes of the Gorges of the Tarn.
Trénels

A proper "trénel" requires careful preparation using mutton tripe and stomach (to be cleaned for a long time). Cut the stomach into large pieces. Put a clove of garlic stuck with a clove into each piece, a few strips of ham and a piece of finely chopped tripe. Wrap up the "trénels". Then arrange them on a layer of rind and add a few carrots, thyme, bay, salt, pepper and to finish, white wine and water. Leave to simmer over low heat.
